Homemade Pumpkin Spice Trail Mix Recipe

Ingredients
  • 2 cups old-fashioned oats
  • ½ cup pepitas
  • ¼ cup maple syrup
  • ¼ cup coconut oil, melted
  • 3 tablespoons brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 cups halved pecans
  • 1 egg white, whisked until foamy
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon
  • ⅛ teaspoon salt
  • 1 cup orange and black M&M's
  • 1 cup dried cranberries
Directions
  1. Preheat the oven to 350 F.
  2. Mix all of the granola ingredients in a large bowl until completely combined.
  3. Spread the mixture onto a parchment-lined baking sheet in a single layer.
  4. Bake for 20 to 25 minutes, stirring halfway through, until the granola is browned and crispy.
  5. In the meantime, make the pecans. Toss the pecans in a large bowl with the beaten egg white.
  6. Add the granulated sugar, cinnamon, and salt, and toss to coat.
  7. Turn the oven temperature down to 325 F.
  8. Spread on a baking sheet in a single layer and bake for 20 minutes, stirring well halfway through.
  9. Cool the granola and pecans completely, then combine them in one large bowl. Add the cranberries and M&M's, then serve or store.
