Ingredients
  • 2 cups ditalini pasta
  • ⅓ cup cider vinegar
  • 2 teaspoons honey
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup olive oil
  • 1 cup cooked corn kernels
  • 1 cup black beans
  • 1 cup diced cherry tomatoes
  • 1 cup finely diced red bell pepper
  • 1 cup finely diced green bell pepper
  • ½ cup finely diced red onion
  • 2 medium avocados, cubed
  • 1 cup crumbled cotija cheese
  • ½ cup minced cilantro
  • Salt, to taste
Directions
  1. Bring a pot of salted water to a boil and cook the pasta until tender.
  2. While the pasta is cooking, make the dressing by combining the vinegar, honey, and spices in a bowl, and whisking as you slowly pour in the olive oil.
  3. When the pasta is finished cooking, drain it and toss it with ¼ cup of the dressing. Then place the pasta in the fridge for around 20 minutes to cool.
  4. Once the pasta has cooled to room temperature, mix in the corn, beans, tomatoes, bell peppers, and red onion.
  5. Pour over the remaining dressing and toss well.
  6. When you are ready to serve, mix in the avocado, cotija, and cilantro, and add salt to taste.
