Ingredients
  • 2 pounds heirloom tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 3 ounces feta, crumbled
  • ΒΌ cup basil leaves
Directions
  1. Preheat the oven to 275 F.
  2. Wash and slice the tomatoes so they are roughly evenly sized.
  3. Place the tomatoes into a large baking tray.
  4. Drizzle the tomatoes with the olive oil and season well with salt and pepper.
  5. Place the tray in the oven to slow roast for 1 hour 30 minutes.
  6. Remove the tray from the oven and let the tomatoes cool for 15 minutes.
  7. Roughly chop the basil leaves.
  8. Add the roasted tomatoes to a bowl.
  9. Add the crumbled feta and basil leaves to the bowl.
  10. Drizzle any remaining baking tray juices over the salad and gently toss to combine.
  11. Serve.
