3-Ingredient Banana Pancakes Recipe

Ingredients
  • 3 medium ripe bananas
  • 5 large eggs, at room temperature
  • ¾ cup oat flour
  • A little neutral oil for frying
Directions
  1. Mash the bananas with a fork until mostly smooth.
  2. Break the eggs into a bowl.
  3. Whisk the eggs until well mixed.
  4. Whisk the mashed bananas into the eggs.
  5. Add the oat flour to the egg and banana mixture
  6. Mix to form the pancake batter.
  7. Heat a lightly oiled pan to a medium heat.
  8. Add roughly ¼ cup of pancake mixture to the pan for each pancake, making sure not to crowd the pan.
  9. Cook for 2 to 3 minutes on one side until the top has bubbles and the bottom easily lifts free.
  10. Flip the pancakes and cook for another 1 to 2 minutes on the other side.
  11. Repeat the process until all the batter has been used, and serve immediately.
