3-Ingredient Banana Pancakes Recipe

Ingredients
3 medium ripe bananas
5 large eggs, at room temperature
¾ cup oat flour
A little neutral oil for frying
Directions
Mash the bananas with a fork until mostly smooth.
Break the eggs into a bowl.
Whisk the eggs until well mixed.
Whisk the mashed bananas into the eggs.
Add the oat flour to the egg and banana mixture
Mix to form the pancake batter.
Heat a lightly oiled pan to a medium heat.
Add roughly ¼ cup of pancake mixture to the pan for each pancake, making sure not to crowd the pan.
Cook for 2 to 3 minutes on one side until the top has bubbles and the bottom easily lifts free.
Flip the pancakes and cook for another 1 to 2 minutes on the other side.
Repeat the process until all the batter has been used, and serve immediately.
