Chicken Parmesan Sliders Recipe

Ingredients
  • 10 ounces breaded chicken tenders
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • ¾ teaspoon garlic puree, divided
  • 1 (14-ounce) can chopped tomatoes
  • 2 teaspoons brown sugar
  • ¼ teaspoon dried basil
  • ½ teaspoon dried oregano, divided
  • ½ teaspoon sea salt
  • ¼ teaspoon pepper
  • 2 tablespoons butter, softened
  • 9 mini brioche slider buns
  • 1 (4.5-ounce) ball fresh mozzarella, sliced
  • ½ cup freshly grated Parmesan, divided
  • 2 tablespoons fresh basil, chopped
Directions
  1. Preheat the oven to 350 F.
  2. Bake the breaded chicken in the oven according to the packet instructions.
  3. Remove the chicken from the oven.
  4. Heat the olive oil in a frying pan over medium heat.
  5. Saute the diced onion for 5 to 6 minutes until soft and translucent.
  6. Add ½ teaspoon of garlic puree, the chopped tomatoes, brown sugar, dried basil, ¼ teaspoon dried oregano, and salt and pepper.
  7. Stir and allow the mixture to simmer gently for 10 minutes until thickened.
  8. In a bowl mix together the butter, ¼ teaspoon garlic puree, ¼ teaspoon dried oregano, and a pinch of salt and pepper.
  9. To assemble the sliders, first place the bottom of the rolls in a lined pan or suitably-sized oven tray.
  10. Brush a little of the butter mixture over the base of the buns.
  11. Spread the tomato sauce over the top of the buttered buns.
  12. Top the tomato sauce with the cooked breaded chicken pieces.
  13. Layer the chicken with slices of mozzarella.
  14. Sprinkle the mozzarella with grated Parmesan, reserving 2 tablespoons, and the fresh basil.
  15. Place the tops on the buns.
  16. Brush the buns liberally with the remaining garlic butter mixture.
  17. Sprinkle the reserved Parmesan over the top of the buns.
  18. Cover with foil and bake for 15 to 20 minutes.
  19. Remove from the oven and serve.
