Deluxe Egg Salad Croissant Sandwich Recipe

Ingredients
  • 4 large eggs
  • ½ stalk celery, finely chopped
  • 2 medium radishes, finely chopped
  • 1 teaspoon finely chopped shallot
  • 1 tablespoon chopped parsley
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 4 croissants
  • 1 tablespoon butter
  • 4 curly lettuce leaves
  • 2 thinly sliced radishes
Directions
  1. Place the eggs in a small saucepan and just cover them with water.
  2. Bring the water to a boil on medium high heat.
  3. Meanwhile, prepare an ice bath by filling a medium mixing bowl with water and ice.
  4. As soon as the water boils, remove the pan from the heat, cover, and set a timer for 10 minutes.
  5. After 10 minutes have elapsed, transfer the eggs to the ice bath and let them cool completely, about 10 more minutes.
  6. Peel the eggs and place them in a mixing bowl.
  7. Mash them with a fork until crumbled into small, even pieces.
  8. Add the chopped celery, radish, shallot, and parsley and the mayonnaise, Dijon, vinegar, salt, and pepper to the bowl and stir until well mixed.
  9. Cut the croissants in half and butter the bottom half of each one.
  10. Place a lettuce leaf on the bottom half of each croissant and top with the egg salad, sliced radishes, and the top half of the croissants.
  11. Serve immediately or refrigerate until ready to serve.
