Watermelon Lime Slushie Recipe

Ingredients
  • 4 cups seedless watermelon, cubed
  • ΒΌ cup maple syrup
  • 8 mint leaves + more for garnish
  • 1 lime or 2 tablespoons lime juice + more for garnish
  • 1 cup coconut water
Directions
  1. Place the cubed watermelon on a baking sheet in a single layer.
  2. Cover and freeze for a minimum of 4 hours.
  3. Add the maple syrup and mint leaves to a small pot.
  4. Simmer for 20 minutes.
  5. Strain, cover, and chill in the fridge.
  6. When the watermelon is frozen, add it to a blender with the chilled maple syrup, lime juice, and coconut water.
  7. Blend until slushy using the blender tamper if needed.
  8. Transfer to 2 glasses.
  9. Garnish and serve.
