Air Fryer Zucchini Chips With Mint Dip Recipe

Ingredients
  • ¼ cup Greek yogurt
  • ½ tablespoon finely chopped mint
  • ½ tablespoon lemon juice
  • 1 pinch salt
  • 1 pinch black pepper
  • ½ pound zucchini
  • ½ tablespoon extra virgin olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
Directions
  1. Place the yogurt, mint, lemon, salt, and pepper in a bowl and stir well to mix. Taste and adjust for salt and pepper. Set aside in the refrigerator.
  2. Slice the zucchini into ⅛-inch rounds using a knife or a mandoline slicer. Try to make them all the same width.
  3. Place the zucchini rounds in a mixing bowl with the oil and seasonings and toss well to coat the rounds evenly.
  4. Place the rounds in a single layer in the air fryer basket or rack. Work in batches if you can't fit them all in a single layer to avoid overcrowding.
  5. Preheat the air fryer to 400 F.
  6. Air fry for 15-20 minutes, flipping halfway, until crispy and browned. Check periodically after the halfway mark and remove any chips that are turning too brown.
  7. Serve warm or cool.
