Simple Cookies And Cream Pie Recipe

Ingredients
  • 20 chocolate creme sandwich cookies (like Oreos)
  • ¼ cup unsalted butter, melted
  • 1 ⅓ cups heavy whipping cream
  • 1 cup cream cheese
  • 1 cup confectioners' sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 10 crushed sandwich cookies
  • ¾ cup heavy whipping cream
  • 2 tablespoons confectioners' sugar
  • 2 tablespoons sandwich cookie crumbs
Directions
  1. Preheat the oven to 350 F.
  2. Begin the crust: Add the sandwich cookies to a food processor.
  3. Blitz until the cookies have been reduced to crumbs.
  4. Transfer cookie crumbs to a bowl and mix with melted butter to form a sand-like consistency.
  5. Press the mixture into the base and sides of an 8-inch cake tin.
  6. Transfer crust to the oven and bake for 8 minutes. Once baked, remove and set aside to cool.
  7. Begin the filling: Whip the cream with a whisk or hand mixer until soft peaks form.
  8. In a stand mixer, beat the cream cheese until softened and smooth.
  9. Mix the confectioners' sugar, salt, and vanilla extract into the cream cheese.
  10. Fold in the whipped cream.
  11. Fold in the crushed cookies.
  12. Spoon the cookies and cream filling into the cooled pie crust. Transfer to the fridge and cool for at least 4 hours.
  13. To decorate, whip ¾ cup cream with 2 tablespoons confectioners' sugar to form stiff peaks.
  14. Pipe or dollop the fresh whipped cream on top of the pie.
  15. Sprinkle the cookie crumbs over the top of the cream before serving.
