Anytime Chocolate Zucchini Muffins Recipe

Ingredients
  • 1 cup all-purpose flour
  • ⅓ cup cacao powder
  • ¾ cup coconut sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup grated zucchini, moisture squeezed out
  • ½ cup milk
  • ⅓ cup refined coconut oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla
  • 1 cup chocolate chips, divided
Directions
  1. Preheat the oven to 350 F.
  2. Line a muffin tin with parchment liners.
  3. In a large bowl, combine the flour, cacao powder, sugar, baking soda, baking powder, and salt.
  4. In a small bowl, combine the zucchini, milk, oil, vinegar, and vanilla.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fold in ½ cup of the chocolate chips.
  7. Distribute the batter into the muffin tin and bake for 20–25 minutes, or until a toothpick comes out clean.
  8. While they are baking, add the chocolate chips to a small pot and melt, or melt in the microwave.
  9. When the muffins come out, let them cool for 5 minutes in the pan, and then transfer to a wire rack for 15 minutes.
  10. Drizzle on the melted chocolate and add flaky salt, if desired, before serving.
