Bison Burger With Cajun Bourbon Mayo Recipe

Ingredients
  • 2 small Spanish onions, very thinly sliced
  • 2 cups buttermilk
  • 2 cups flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 quart vegetable or canola oil, for frying
  • ½ cup mayonnaise
  • 2 cloves garlic, grated
  • 1 tablespoon bourbon
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon lemon juice
  • 1 pound ground bison
  • 1 teaspoon salt
  • 1 teaspoon cracked black pepper
  • 2 tablespoons grapeseed oil, for cooking
  • 4 brioche buns
Directions
  1. Combine the onions and buttermilk in a large bowl, mixing well so that all onions are coated. Soak for 30 minutes, stirring often.
  2. In the meantime, combine the flour, garlic powder, paprika, salt, and pepper in a large bowl.
  3. Heat the oil in a Dutch oven over medium heat until hot. The oil should read 350 F using a candy thermometer.
  4. Working a handful at a time, shake the buttermilk off of the onions and dredge in the flour mixture.
  5. Add the onions to the hot oil and fry until golden brown and crispy, about 5 minutes.
  6. Remove from the oil and drain on paper towels. Repeat with the remaining onions, working in batches.
  7. To make the bourbon mayo, combine the mayonnaise, garlic, bourbon, Cajun seasoning, and lemon juice in a small bowl.
  8. Stir to combine and set aside.
  9. To make the burgers, combine the bison, salt, and pepper in a bowl. Gently mix to combine.
  10. Form 4 patties.
  11. Heat the grapeseed oil in a cast iron skillet over medium heat.
  12. Working in batches, cook the bison burgers until deeply browned, about 4 minutes per side.
  13. To build the burgers, slather bourbon mayo on a bottom bun. Add the bison patty, then top with onion straws. Add top bun to serve.
