Maple Apple Cider-Glazed Salmon Recipe

Ingredients
  • ¼ cup apple cider
  • ½ tablespoon honey
  • ½ tablespoon maple syrup
  • 2 (6-ounce) salmon fillets
  • salt, to taste
  • black pepper, to taste
  • ½ tablespoon olive oil
  • ½ teaspoon chopped parsley
  • 2 lemon wedges
Directions
  1. Place the apple cider, honey, and maple syrup in a small saucepan and bring to a boil.
  2. Reduce the heat and simmer for 5 to 7 minutes, until the liquid has reduced by half and has thickened.
  3. Pour the glaze into a shallow dish just large enough to fit the salmon and let it cool, about 2 minutes.
  4. Pat the salmon fillets dry, sprinkle salt and pepper on both sides, and place them in the dish with the glaze. Turn the fillets to coat all sides and set aside to marinate for 15 minutes.
  5. Heat the oil over medium-high heat in a skillet.
  6. When the oil is hot, lift the salmon fillets to allow extra marinade to drip off and place them skin side down in the pan. Brush a small amount of glaze on top and cook for 3 to 4 minutes.
  7. Flip the salmon, brush the other side with a small amount of glaze, and cook for 3 to 4 more minutes, or until cooked through. Watch the salmon carefully so the glaze doesn't burn and adjust the heat if necessary.
  8. Serve the salmon immediately with chopped parsley and lemon wedges.
