Shepherd's Pie Poutine Recipe

Ingredients
  • 1 (24-ounce) bag frozen thick-cut french fries
  • 4 tablespoons olive oil, divided
  • 1 ½ teaspoons salt, divided
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1 cup beef broth
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • ½ teaspoon black pepper
  • 1 cup frozen pea and carrot medley
  • 2 cups cheddar cheese curds
  • ¼ cup finely chopped parsley
Directions
  1. Preheat the oven to 425 F.
  2. Arrange the french fries on a sheet pan and drizzle with 2 tablespoons olive oil.
  3. Bake for 16–18 minutes, or according to package directions. Sprinkle with 1 teaspoon salt immediately after baking.
  4. In the meantime, heat the remaining olive oil in a deep skillet over medium heat.
  5. Add the beef and crumble until browned, about 5 minutes.
  6. Add the onion and garlic and soften, about 3 minutes longer.
  7. Add the tomato paste and mix to combine. Let caramelize slightly, about 4 minutes.
  8. Add the flour and stir to combine.
  9. Once the flour is incorporated, add the Worcestershire sauce and beef broth. Stir well to combine.
  10. Add the remaining salt, thyme, rosemary, and pepper and bring to a simmer. Let thicken into a gravy.
  11. Add the peas and carrots and cook until tender, about 4–5 minutes.
  12. When you're ready to serve, add the fries to a serving tray and arrange the cheese curds on top.
  13. Add the shepherd's pie mixture on top of the fries. Top with parsley to serve.
