Rich and Creamy Chicken Cordon Bleu Soup Recipe

Ingredients
  • 1 tablespoon olive oil
  • 2 chicken breasts, diced
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon butter
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon all-purpose flour
  • 3 ½ cups chicken stock
  • 7 ounces cream cheese
  • ½ cup heavy cream
  • ½ cup grated cheddar cheese, plus extra for serving
  • 1 cup diced ham
  • 1 cup croutons
  • 1 tablespoon fresh parsley
Directions
  1. Heat the olive in a wide, deep pan over a medium-high heat.
  2. Add the diced chicken to the pan and season well with salt and pepper.
  3. Fry for 4 to 5 minutes, until the chicken is cooked through.
  4. Remove the chicken from the pan, reduce the heat to medium, and add the butter to the pan.
  5. Add the diced onion and garlic and fry for 6 to 8 minutes, until the onion is soft and translucent.
  6. Stir the flour into the onion mixture.
  7. Pour in the chicken stock to the pan and mix well. Allow the mixture to simmer for 3 to 4 minutes.
  8. Add the cream cheese, heavy cream, and grated cheddar cheese.
  9. Stir until the ingredients are combined and the soup is simmering gently.
  10. Return the chicken to the pan along with the diced ham.
  11. Simmer for a final 3 to 4 minutes.
  12. Serve the soup topped with croutons, a little more grated cheese, and fresh parsley.
