Strawberry Lemonade Buttermilk Donuts Recipe

Ingredients
  • 1 cup buttermilk
  • 1 egg
  • 3 tablespoons unsalted butter, melted
  • 3 cups all purpose flour
  • ¾ cup granulated sugar
  • 1 tablespoon brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup diced strawberries
  • 1 lemon
  • 3 cups powdered sugar
  • 1 quart oil, for frying
Directions
  1. Combine the buttermilk, egg, and melted butter in a small bowl.
  2. In a separate bowl, combine the flour, both sugars, baking powder, baking soda, and salt.
  3. Stir the wet ingredients into the dry ingredients until a soft dough forms.
  4. Gently mix in the strawberries.
  5. Empty the dough onto a lightly floured work surface and knead a few times to bring it together.
  6. Generously flour the dough and roll it out to ½-inch thick.
  7. Use a donut cutter to cut out donuts.
  8. Reroll the remaining edges and holes once and cut again (you should have roughly 10 donuts).
  9. Heat the oil in a large pot to 350 F.
  10. Fry the donuts, flipping once, for 2–3 minutes per side, until deep golden brown.
  11. Drain on a paper towel.
  12. Juice and zest the lemon into a mixing bowl.
  13. Stir in the powdered sugar until smooth and pourable (add a splash of water if it looks too thick).
  14. Dip the top of each donut in the lemon glaze.
  15. Let sit for 5 minutes to allow the glaze to set. Enjoy!
