Grilled Pineapple Mojito Recipe

Ingredients
  • ½ small pineapple, sliced
  • 2 tablespoons lime juice
  • 10 mint leaves, plus extra for garnish
  • 1 tablespoon granulated sugar
  • 4 ounces white rum
  • Crushed ice
  • 6 ounces soda water
Directions
  1. Heat up a griddle pan or grill to a medium-high heat.
  2. Place the slices of pineapple on the heat and cook for 3 to 4 minutes, until well charred.
  3. Flip the pineapple slices over and grill them for another 2 to 3 minutes.
  4. Remove the grilled pineapple from the pan and leave to cool for 10 minutes.
  5. Dice roughly ½ cup of the cooled grilled pineapple.
  6. Add lime juice, mint leaves, granulated sugar, and ¼ cup of the diced pineapple to a cocktail shaker.
  7. Muddle well.
  8. Add the rum and a handful of ice to the shaker. Shake well.
  9. Fill 2 glasses with ice and the remaining diced grilled pineapple.
  10. Strain the mojito into the glasses.
  11. Garnish with more mint, the remaining grilled pineapple, and pineapple leaves.
  12. Top off the cocktails with soda water and serve.
