Protein-Packed Ranch Snack Dip Recipe

Ingredients
  • 1 (16-ounce) container cottage cheese
  • 1 teaspoon dried parsley
  • 1 teaspoon dried dill
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 8 ounces frozen edamame
  • 1 red bell pepper, cut into strips
  • 4 small carrots, halved
  • 1 English cucumber, sliced
  • 4 celery sticks, halved
Directions
  1. Add the cottage cheese to the food processor. Blend until smooth.
  2. Add the parsley, dill, onion powder, garlic powder, salt, and pepper to the food processor.
  3. Pulse 5 to 6 times, until incorporated, then pour the dip into a small bowl and set aside.
  4. Bring a medium pot of generously salted water to a boil.
  5. Add the edamame to the boiling water and cook until bright green, 2 to 3 minutes.
  6. Remove the edamame with tongs and immediately transfer to a bowl of ice water.
  7. Arrange the edamame and other vegetables on a large platter and serve with the dip.
