Weeknight-Friendly Spinach Turkey Lasagna Recipe

Ingredients
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground turkey
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon ground black pepper, divided
  • 2 (24-ounce) jars marinara sauce
  • 1 (32-ounce) container whole milk ricotta cheese
  • ¾ cup grated Parmesan cheese, divided
  • 4 cups baby spinach leaves
  • 8 ounces oven-ready lasagna sheets
  • 1 cup roughly chopped basil leaves
  • 1 pound shredded whole milk mozzarella cheese
Directions
  1. In a medium pan, heat oil over medium heat until shimmering.
  2. Add onion and cook, stirring occasionally, until just starting to brown, 3 to 4 minutes.
  3. Add garlic and cook, stirring, for an additional minute.
  4. Add turkey, ½ teaspoon kosher salt, and ¼ teaspoon black pepper, and cook, stirring, until browned and cooked through, 6 to 7 minutes.
  5. Stir in marinara and remove from heat; set aside.
  6. In a medium bowl, stir to combine ricotta cheese, ½ cup Parmesan cheese, the remaining ½ teaspoon kosher salt and ¼ teaspoon ground black pepper, spinach, and Italian seasoning, if using. Set aside.
  7. Preheat oven to 400 F.
  8. Spray to coat a 9x13-inch broiler-safe baking pan with cooking spray.
  9. Portion a layer of the sauce mixture into the bottom of the pan.
  10. Top with three lasagna sheets.
  11. Spread ⅓ of the ricotta mixture over the lasagna sheets and top with a layer of sauce and sprinkling of basil.
  12. Top evenly with ¼ of the mozzarella.
  13. Repeat, layering the lasagna with noodles, ricotta, sauce, basil, and mozzarella two additional times.
  14. Top with noodles, then remaining sauce, and remaining mozzarella.
  15. Cover with foil and bake for 15 minutes. Uncover and bake for an additional 25 to 30 minutes until noodles are tender and sauce is bubbling.
  16. Set oven to broil.
  17. Broil for 1 to 2 minutes until browned in spots.
  18. Sprinkle with remaining Parmesan cheese and let stand for at least 15 minutes before serving.
