Smoky-Sweet Chicken Al Pastor Recipe

Ingredients
  • 3 canned chipotles in adobo + 2 tablespoons reserved adobo sauce
  • 2 teaspoons ground annatto seeds
  • ¼ cup canned pineapple juice
  • Juice of ½ lime
  • ½ teaspoon cinnamon
  • ¼ cup olive oil
  • ½ teaspoon smoked paprika
  • 2 teaspoons oregano
  • 1 teaspoon cumin
  • 1 teaspoon honey
  • 3 cloves garlic, minced
  • 1 pound chicken thighs, bone in and skin on
Directions
  1. Combine all ingredients but chicken in a blender
  2. Blend until well combined.
  3. Pour marinade into a large bowl. Add chicken and toss to coat completely. .
  4. Marinate for at least 1 hour or up to 8 hours.
  5. Preheat the oven to 400 F.
  6. Arrange the chicken on a sheet pan fitted with a wire rack.
  7. Roast for 30 minutes or until internal temperature reaches 165 F.
  8. When chicken is cooked through, remove from the oven and shred the skin and meat using two forks. Discard the bones.
  9. Serve with desired accompaniments, such as flour or corn tortillas, white onions, cilantro, and/or lime wedges.
