Hazelnut Crumb-Coated Chicken Recipe

Ingredients
  • ½ cup chopped hazelnuts
  • ¼ cup dried breadcrumbs
  • ⅓ cup all-purpose flour
  • ½ teaspoon mustard powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ⅓ teaspoon black pepper
  • 2 medium-sized boneless, skinless chicken breasts
  • 1 large egg at room temperature
  • 1 teaspoon chopped fresh parsley
Directions
  1. Preheat the oven to 425 F.
  2. Line a baking dish with parchment paper.
  3. In a wide, shallow dish, combine the chopped hazelnuts and breadcrumbs.
  4. In a separate, shallow dish, combine the all-purpose flour with mustard powder, Italian seasoning, garlic powder, sea salt, and black pepper.
  5. In a third bowl, crack the egg and whisk it well.
  6. Slice the chicken breasts in half through the center to make 4 chicken cutlets.
  7. Coat each chicken cutlet thoroughly in the seasoned flour mixture.
  8. Dredge each chicken cutlet through the whisked egg.
  9. Add the chicken cutlets to the hazelnut and crumb mixture and gently press to coat the chicken all over.
  10. Place the coated chicken cutlets onto a baking tray.
  11. Bake in the oven for 14 minutes, until the chicken is cooked and the crumb coating is golden.
  12. Serve hot.
