Classic Chicken Stroganoff Recipe

Ingredients
  • 2 tablespoons sunflower oil
  • 1 pound chicken thighs, boneless and skinless, diced
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons butter
  • 1 large onion, sliced
  • 1 (¾-pound) carton white mushrooms, sliced
  • 3 garlic cloves, crushed
  • 2 teaspoons paprika
  • 2 teaspoons Dijon mustard
  • 2 cups chicken stock
  • ½ cup sour cream
Directions
  1. Place a large pan over medium-high heat and add the olive oil.
  2. Season the diced chicken thighs well with salt and pepper.
  3. Brown the chicken in the hot oil for 5 to 6 minutes, then remove from the pan.
  4. Reduce the heat to medium and add the butter.
  5. Add the sliced onion, mushrooms, and garlic to the pan and saute for 8 to 10 minutes until soft.
  6. Stir in the paprika and Dijon mustard.
  7. Add the chicken stock and mix to form a sauce.
  8. Return the chicken to the pan and let everything simmer for 5 minutes or until the chicken is cooked through and the liquid has reduced.
  9. Add the sour cream and stir it in to complete the sauce.
  10. Serve hot, optionally with a dash of Worcestershire sauce and a sprinkling of fresh parsley.
