Gingerbread White Chocolate Snack Cake Recipe

Ingredients
  • 6 tablespoons vegetable oil
  • ¼ cup milk
  • 1 teaspoon salt plus a pinch
  • 10 ounces white chocolate chips
  • 5 large eggs, separated, room temperature
  • 2 teaspoons vanilla extract
  • ¾ cup granulated sugar
  • ¾ cup almond flour
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground clove
  • ¼ teaspoon nutmeg
  • 2 tablespoons molasses
  • 2 tablespoons white chocolate powder
Directions
  1. Preheat oven to 350 F.
  2. Spray a springform pan with nonstick spray and line the bottom with a parchment paper round.
  3. Heat oil, milk, and 1 teaspoon salt in a small pot over medium heat until just simmering.
  4. Add chocolate chips and stir until melted and smooth. Remove from heat.
  5. Whisk in egg yolks and vanilla.
  6. Fold in almond flour, spices, and molasses and mix well.
  7. Using an electric mixer, beat the egg whites with a pinch of salt until foamy, about a minute.
  8. With the beaters running, slowly pour in sugar.
  9. Increase speed to high and beat until stiff peaks form and mixture is glossy.
  10. Scoop out a heaping cup of meringue to a separate bowl.
  11. Stir 2 tablespoons white chocolate powder into the reserved cup of meringue.
  12. Transfer about half of the remaining meringue to a bowl and fold in the molasses-white chocolate batter to lighten it.
  13. Fold in the rest of the meringue, minus the reserved cup, and mix until just combined.
  14. Transfer batter into the prepared pan.
  15. Spoon dollops of the reserved cup of white chocolate powder meringue over the batter.
  16. Use a knife or toothpick to swirl patterns in the dollops of meringue on top of the batter.
  17. Bake the cake until a cake tester or toothpick inserted into the center comes out clean, 50 to 60 minutes.
  18. Run a small knife or offset spatula around the cake in the pan to loosen it from the sides and let cool completely.
  19. Remove from pan, slice and serve.
