No-Bake Chocolate Peppermint Cheesecake Recipe

Ingredients
  • 25 Oreo cookies
  • ¼ cup butter, melted
  • 16 ounces cream cheese, room temperature
  • 14 ounces sweetened condensed milk
  • 1 teaspoon peppermint extract
  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream
  • ¼ cup crushed candy canes
Directions
  1. Add the Oreos to the bowl of a food processor and pulse until they become fine crumbs.
  2. Add the melted butter to the food processor and pulse until combined.
  3. Add the crumb mixture to the bottom of a springform pan and use the back of a measuring cup to press it into an even layer. Place the crust in the freezer while you make the filling.
  4. In a large bowl beat the cream cheese on low speed until it is creamy and no lumps remain.
  5. Add the sweetened condensed milk and peppermint extract to the bowl and beat until thoroughly combined.
  6. Pour the filling over the prepared crust.
  7. In a small bowl mix together the chocolate chips and heavy cream. Microwave in 30 second increments until melted.
  8. Pour the melted chocolate over the filling in the pan and spread it out evenly.
  9. Sprinkle the crushed candy canes over the ganache.
  10. Refrigerate for at least 4 hours, until set. When ready to serve run a knife between the cheesecake and the pan, then cut and serve.
