Chopped Asparagus Salad Recipe

Ingredients
  • 1 bunch asparagus, ends removed, chopped into 1-inch pieces
  • 3 tablespoons olive oil
  • 2 tablespoons Champagne vinegar
  • Juice of ½ lemon
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 carrot, diced
  • 1 English cucumber, diced
  • 4 radishes, diced
  • ½ cup diced roasted red peppers
  • 1 cup halved grape tomatoes
  • 1 (15-ounce) can chickpeas, drained
  • ¼ cup diced red onion
  • ½ cup feta cheese
Directions
  1. Bring a pot of water to boil and drop in the chopped asparagus for 1 minute.
  2. Drain the asparagus and place in a bowl of ice water for 2 minutes.
  3. Drain the asparagus in a colander.
  4. In a small bowl combine the olive oil, vinegar, lemon juice, salt, and pepper.
  5. In a large bowl combine the blanched asparagus, carrot, cucumber, radishes, roasted red pepper, tomatoes, chickpeas, onion, and feta cheese.
  6. Toss with dressing and serve.
