Banana Pecan Brownie Recipe

Ingredients
  • 6 ounces dark chocolate, broken into small pieces
  • ¾ cup granulated sugar
  • ¾ cup (1 ½ sticks) butter
  • ⅔ cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 medium-sized ripe bananas, divided
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans
Directions
  1. Preheat oven to 350 F.
  2. Line a 9x9-inch baking dish with parchment paper, and grease.
  3. Add chocolate, sugar, and butter to a bowl set over a saucepan of simmering water.
  4. Heat, stirring occasionally, until chocolate is melted and smooth. Set aside to cool.
  5. In a medium-sized bowl, whisk together flour, cocoa powder, baking powder, and salt.
  6. In a separate bowl, roughly mash 2 bananas using a fork.
  7. Whisk the eggs in another bowl.
  8. Add eggs and vanilla extract to the cooled chocolate mixture, stirring well to combine.
  9. Stir the mashed bananas into the chocolate mixture.
  10. Add the dry ingredients to the chocolate mixture, folding in until just combined.
  11. Fold in the chopped pecans.
  12. Transfer the brownie batter to the prepared pan and smooth out the top.
  13. Slice the remaining banana in half lengthwise and lay the halves on top of the brownie batter.
  14. Bake for 25-30 minutes.
  15. Allow brownies to cool before slicing and serving.
