Ingredients
  • 2 large boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • 4 tablespoons butter, divided
  • 2 cups sliced apples, cut into thin wedges
  • 2 teaspoons light brown sugar
  • 3 shallots, finely chopped
  • 1 cup chicken stock
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme

Directions
  1. Cut the chicken breasts lengthways into thin cutlets.
  2. Mix the flour with the salt and pepper in a medium-sized bowl with a flat bottom.
  3. Coat the chicken cutlets thoroughly in the flour mixture.
