Sausage-Stuffed Thanksgiving Stuffing Bites Recipe

Ingredients
  • 3 cups cubed sourdough bread
  • 4 tablespoons butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup diced celery
  • ½ cup white wine
  • ½ pound ground Italian sausage
  • ½ cup chicken broth
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon chopped sage
  • ½ cup cranberries
  • 2 tablespoons sugar
  • Juice from ½ lemon
Directions
  1. Preheat the oven to 350 F.
  2. Arrange bread cubes on a sheet tray, and toast for about 5 minutes. Remove from the oven.
  3. Transfer bread cubes to a large bowl.
  4. Melt butter in a skillet over medium heat.
  5. Add the onion, garlic, and celery and cook until softened, about 4-5 minutes.
  6. Add the white wine and cook until reduced, about 3-4 minutes.
  7. Pour mixture over the bread cubes.
  8. In the same skillet, brown the sausage, crumbling as you cook.
  9. Add the sausage to the bread mixture.
  10. Add the chicken broth, egg, salt, pepper, and sage to the bread mixture.
  11. Mix well to combine, ensuring the bread is completely covered.
  12. Grease a mini cheesecake pan.
  13. Press the bread mixture firmly into the tins.
  14. Bake until golden brown, about 20-25 minutes.
  15. In the meantime, add the cranberries, sugar, and lemon juice to a small saucepan over medium heat.
  16. Cook, stirring constantly, until cranberries are broken down and mixture is jammy, about 4-5 minutes. Let cool.
  17. Carefully remove the stuffing bites from the tin.
  18. Top each stuffing bite with ½ teaspoon cranberry jam to serve.
