Ingredients
  • 1 pound ground turkey
  • 1 egg
  • ¼ cup breadcrumbs
  • 1 tablespoon finely chopped sage
  • 2 teaspoons salt, divided
  • 1 teaspoon white pepper
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon minced shallot
  • 1 teaspoon grated garlic
  • ¼ cup butter
  • ¼ cup flour
  • 2 cups turkey stock
  • 2 sprigs thyme
  • 1 tablespoon heavy whipping cream
  • 1 teaspoon black pepper
Directions
  1. Preheat the oven to 400 F.
  2. Arrange a baking sheet with foil and a wire rack. Spray rack with oil.
  3. Add the turkey, egg, breadcrumbs, sage, 1 teaspoon salt, white pepper, Worcestershire sauce, grated shallot, and grated garlic to a large bowl.
  4. Using your hands, mix the ingredients together until incorporated.
  5. Roll the mixture into 20 1-inch balls.
  6. Arrange meatballs on wire rack.
  7. Bake until golden brown and cooked through, 15-20 minutes.
  8. In the meantime, make the gravy. Melt the butter in a skillet over medium heat.
  9. Whisk in the flour until a golden paste forms. Do not allow to burn.
  10. Once all flour is incorporated, add the turkey stock and thyme. Bring to a simmer and cook until thickened, about 5 minutes.
  11. Whisk in the heavy cream, remaining 1 teaspoon salt, and black pepper. Remove the thyme.
  12. Add the cooked meatballs to the gravy, stirring to coat.
  13. Serve meatballs in gravy.
