Ingredients
  • 2 tablespoons oil
  • 2 chopped leeks
  • 1 diced carrot
  • 4 cups chopped mushrooms
  • 1 cups cooked black lentils
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 sheets puffed pastry, thawed
Directions
  1. Preheat oven to 375 F.
  2. Add oil to a large frying pan and bring heat to medium high.
  3. Add the leeks, mushrooms, and carrots to the pan and cook for 8 minutes.
  4. Stir in the lentils, vinegar, soy sauce, Italian seasoning, onion powder, garlic powder, and salt. Cook on low for 5 minutes.
  5. Slice each puffed pastry into 4 equal squares, yielding 8 total.
  6. Put ¼ cup of the lentil mushroom mixture into the center of each square.
  7. Fold over to form a triangle.
  8. Seal with some water on your fingers.
  9. Press down the edges with a fork. Repeat the process, forming 8 hand pies.
  10. Transfer the hand pies to two baking sheets and cook for 20-25 minutes or until golden brown.
  11. Serve the savory mushroom and lentil hand pies.
