Blueberry Cardamom Donut Recipe

Ingredients
  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon cardamom
  • ½ cup sour cream
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 cup blueberries
  • 1 cup confectioner's sugar
  • ½ teaspoon vanilla extract
  • 2 ½ tablespoons milk
Directions
  1. Preheat the oven to 350 F. Spray donut pans well with cooking spray and set aside.
  2. In a medium bowl, whisk together the flour, brown sugar, salt, baking powder, and cardamom.
  3. In a large bowl, whisk together the sour cream, butter, and egg. Add in the dry ingredients about ⅓ at a time and whisk until smooth and combined.
  4. Gently fold the blueberries into the batter until incorporated.
  5. Spoon or pipe the batter into the prepared donut pans, filling donut cavities about ¾ full. Tap the pans on the countertop so the batter settles evenly in the pan.
  6. Bake in the preheated oven for 15-18 minutes until the edges of the donuts are golden brown and when you press on the donuts they spring back. Let the donuts cool in the pan for 10 minutes before placing them onto cooling racks to cool completely.
  7. In a small bowl, whisk together the confectioner's sugar, vanilla extract, and milk.
  8. Place the cooling rack with the donuts over a piece of parchment paper or a baking sheet to catch any excess glaze. Dip the tops of the cooled donuts in the glaze and place them back on the cooling rack to set.
