Ingredients
½ cup pine nuts
¾ cup pomegranate seeds
¾ cup kalamata olives, pitted, coarsely chopped
½ cup olive oil
¼ cup coarsely chopped fresh mint
¼ cup coarsely chopped fresh parsley
1 tbsp pomegranate molasses
1 clove garlic, minced
Salt, to taste
Freshly ground pepper, to taste
1 (8-ounce) block of feta cheese
Directions
Preheat your oven to 375 F.
In a bowl, combine pine nuts, pomegranate seeds, olives, olive oil, mint, parsley, pomegranate molasses, and minced garlic.
Season the mixture with salt and pepper to taste.
Place the feta cheese block in a baking dish.
Spread the pomegranate relish mixture evenly over the feta.
Bake it in the preheated oven for 20-30 minutes, until the feta softens and slightly melts.
Remove it from the oven and let it cool for a few minutes.
Serve your baked feta with pomegranate relish as an appetizer or snack, with crackers, pita wedges or baguette slices.
