Bejeweled Baked Feta Recipe

Ingredients
  • ½ cup pine nuts
  • ¾ cup pomegranate seeds
  • ¾ cup kalamata olives, pitted, coarsely chopped
  • ½ cup olive oil
  • ¼ cup coarsely chopped fresh mint
  • ¼ cup coarsely chopped fresh parsley
  • 1 tbsp pomegranate molasses
  • 1 clove garlic, minced
  • Salt, to taste
  • Freshly ground pepper, to taste
  • 1 (8-ounce) block of feta cheese
Directions
  1. Preheat your oven to 375 F.
  2. In a bowl, combine pine nuts, pomegranate seeds, olives, olive oil, mint, parsley, pomegranate molasses, and minced garlic.
  3. Season the mixture with salt and pepper to taste.
  4. Place the feta cheese block in a baking dish.
  5. Spread the pomegranate relish mixture evenly over the feta.
  6. Bake it in the preheated oven for 20-30 minutes, until the feta softens and slightly melts.
  7. Remove it from the oven and let it cool for a few minutes.
  8. Serve your baked feta with pomegranate relish as an appetizer or snack, with crackers, pita wedges or baguette slices.
