Turn Cobbler Into Dinner With A Rotisserie Chicken And Biscuit Mix

If you pay attention to TikTok trends, you know that cobbler isn't just a sweet summertime dessert. In a video with over 688K likes, content creator @yourbarefootneighbor demonstrates a savory recipe for chicken cobbler. Never heard of the dish? The creator named it themself: "I called it chicken cobbler as a joke, and it stuck." But the name works, considering the first half of the recipe resembles a cobbler, and now over 34 million people have seen the original video. The final product is something like a cross between a chicken pot pie and a casserole, and it's an easy way to get a delicious dinner on the table.

Just like in many cobbler recipes, you'll start off by melting a stick of butter in the oven in a baking dish. Then you'll add layers of rotisserie chicken, frozen peas and carrots, a biscuit mixture, chicken stock, and a cream of chicken soup. You'll get warm layers of chicken, buttery biscuit, veggies, and the soup, which plays the role of a gravy when you take a bite. It's full-on comfort food that requires hardly any prep time.

How to make chicken cobbler in a few easy steps

Although @yourbarefootneighbor recommends melting your butter in the oven, you could also just melt it in the microwave and pour it into your casserole dish. After you've dumped in the rotisserie chicken and frozen peas and carrots (although any frozen veggies of your choice would work here), the video advises mixing Red Lobster Cheddar Bay biscuit mix with milk. 

If you can't find it, you can also whip up 2 cups worth of your own biscuit mix. The Red Lobster version doesn't include the cheddar — just the dry ingredients and seasoning — and you can mimic the flavors using garlic powder, paprika, cayenne pepper, and salt. Or, just buy a plain biscuit mix and add these spices to it.

It's also essential that once you pour the biscuit mixture on top, you don't mix anything up. After you've added the soupy ingredients, you can use even more seasoning if you'd like, such as Old Bay or Italian. Then bake everything in the oven and make sure to let it sit for at least 15 minutes to set.
