Upgrade Canned Chicken Noodle Soup With Whisked Eggs

There's just something about chicken noodle soup. Whether you or someone in your family has the sniffles and need a little extra TLC, or it's a gray and rainy day out and you need some extra warmth, or just because, it's the ultimate comfort food (that's actually also good for you — according to The New York Times, science may actually support claims of chicken soup's medicinal value). And while it's best if you can make chicken noodle soup from scratch, not everyone has the luxury of time to do so. Plus if the reason you're craving chicken noodle soup is because you're sick, then you may also not have the strength to put in all that effort.

That's when that can of pre-made chicken noodle soup comes in handy — there's a reason soups are one of the absolute best canned foods to stock your pantry. However, that doesn't mean you have to settle for having your bland and boring canned chicken noodle soup as is. There are numerous upgrades you can make to canned soup to add flavor, texture, or nutrition. One easy upgrade to chicken noodle soup that does all three is to simply add in some whisked eggs.

Chicken noodle meets egg drop soup

If you've ever had Chinese egg drop (or egg flower) soup, or the Italian Roman stracciatella soup, then you're already familiar with the concept of whisking in some egg into hot soup. And it's incredibly easy to do. As you heat up your canned chicken noodle soup, whisk an egg or two together in a bowl. Once the soup is hot enough, reduce the heat to simmer and start stirring it in one direction. As you continue to stir, slowly pour the bowl of whisked eggs into the soup. Let the eggs set in the hot soup for around a minute, then remove from the heat and serve, perhaps topping with some chopped scallions or green onions. That's it.
