Making Greek yogurt flatbread

There really are only two ingredients needed to make this flatbread successfully: self-raising flour and Greek yogurt. Self-raising flour is an excellent ingredient to add to your pantry, as it is three ingredients — flour, salt, and baking powder — combined into one. Flour provides base. Salt provides flavor. Baking powder adds lift without the time needed for standard yeast to rise.

In a bowl, you'll mix together the self-rising flour and your full-fat plain Greek yogurt until if forms a cohesive ball of dough. Measurements will vary depending on how large you want your bread batch to be. You can add any extra flavors, like garlic, thyme, oregano, or red pepper flakes to the flour before adding the yogurt. Let the dough ball rest for at least 20 minutes so that it is able to relax and roll easily.

Divide the dough into smaller balls and roll each into a flat circle. Brush each circle with oil or melted butter, and cook on a hot griddle for just a few minutes per side.
