Scrub the carrots and peel them if they aren't organic. Cut the ends off and cut each carrot into 1-inch slices on the diagonal. Mince the garlic.
Melt the butter in a small pot over medium heat. Once melted, add the minced garlic, and cook for about 2 minutes being careful not to let it burn. Add the honey and stir to blend.
Pour the mixture over the carrots. Stir to combine, then add the salt and pepper.
Transfer the carrots to a large baking tray and cook for 20 to 30 minutes or until they are tender. Chop the parsley while the carrots are cooking. When they are done, add the chopped parsley and serve.
