In a small bowl whisk together the water and cornstarch until smooth.
In a large pot add the cornstarch/water mixture, cherries, sugar, and pineapple juice and stir together.
Heat on medium-high heat until liquid is boiling, then reduce heat to a simmer. Simmer until the sauce has thickened, about 2-3 minutes. Remove from heat and add in the almond extract.
Use pie filling in a pie recipe of your choice, or top desserts with it.
