Easy Spiced Lentils Recipe

Ingredients
  • 1 ½ cups dry, brown lentils
  • 2 cloves garlic
  • 1 tablespoon olive or avocado oil
  • 3 cups vegetable broth
  • 1 (8-ounce) can tomato sauce
  • ½ teaspoon salt
  • ¼ teaspoon cumin
  • ¼ teaspoon garam masala
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon turmeric
  • ¼ teaspoon black pepper
  • ⅛ teaspoon powdered ginger
  • ½ lemon, juiced
Directions
  1. Rinse the lentils in cold water.
  2. Mince the garlic.
  3. Put the oil into a medium pot over medium-high heat. Add the garlic and sauté for 2 minutes, stirring frequently.
  4. Add the lentils, broth, tomato sauce, salt, cumin, garam masala, smoked paprika, turmeric, pepper, and ginger. Stir.
  5. Bring to boil, then reduce to medium-low, cover, and cook for 15 minutes.
  6. Squeeze in lemon juice, stir, and serve.
