16 blondies
Ingredients
  • ¾ cup unsalted butter
  • 2 cups white chocolate chips
  • ½ cup white sugar
  • ½ cup light brown sugar
  • 2 large eggs (at room temperature)
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
Directions
  1. Preheat the oven to 350 F then grease and line a 7x7 or 8x8-inch baking pan with parchment paper.
  2. Add the butter and 1 cup of white chocolate chips to a microwave-safe bowl and heat them in 30-second bursts until melted.
  3. Add the sugars to the melted mixture and stir with a wooden spoon.
  4. Add the eggs one at a time, beating to combine after each addition.
  5. Sift in the flour and add the salt, gently folding until just combined.
  6. Then add the remaining 1 cup of chocolate chips and fold through.
  7. Transfer the mixture to the prepared baking pan, smoothing it out to the edges in an even layer.
  8. Bake for 30 to 35 minutes until golden around the edges with just a slight wobble left in the middle.
  9. Leave the blondies in the pan for about 15 minutes before transferring them to a wire rack to cool completely.
  10. Wait until they have completely cooled before slicing.
