Fabio Trabocchi’s top Italian restaurant is finishing with an even finer flourish: The restaurant just installed Tom Wellings as pastry chef. His new additions include a Budino Piedmontese, made with chocolate-hazelnut cream and caramel sauce, as well as Zuppa Inglese with lemon mascarpone, lambrusco-marinated blackberries and lemon-basil granita.
