Tip: Keep Sparkling Wine from Going Flat
There are plenty of handy gadgets to stop up an open wine bottle and conserve it for future drinking. But in a pinch, we've discovered that a spoon can also keep our Champagne bubbly until tomorrow.
Last night we opened one of our favorite summer bottles, the low-alcohol Patrick Bottex "La Cueille" Bugey-Cerdon Rosé. With more than half the bottle remaining, we stopped the bottle with the stem of a spoon. The strawberry-colored wine had lost little of its sparkle when we poured the remainder with lunch today.
