State of Grace

A roving food truck brings the South to S.F.

51st State's fully loaded Brunswick stew

The rumor that Golden Gate Park's urban wildlife is simmering in 51st State's Brunswick stew is merely that--a rumor.

Certainly, Brunswick stew is traditionally made with squirrel, but this version is not quite so rustic.

The dish is typical hunters' fare in the American South, and accordingly, the regional classic is part of 51st State's mission to bring an unfamiliar taste of the South to San Francisco. Thus, the roaming food truck's menu is not focused on peach pie or BBQ, but on recipes not frequently seen far from their original homes.

51st State's Brunswick stew ($7) may not contain our woodland friends, but the thick tomato base is loaded with house-smoked pork, chicken, spicy sausage and potatoes. The crunchy bacon and green onion toppings aren't standard, but that's the point: This food is modernized Americana, thoughtfully tweaked for the taste buds of big-city dwellers.

No one's really sure where Brunswick stew was born. Georgia? Virginia? Wherever the origin, 51st State wants it to be yours. Whether you snag a bowl straight from the truck or make it at home (click here to download the recipe), the dish is a fine restorative after the hunt--urban or otherwise.
