We live in a city stocked with the world's finest spirits. As a result, it takes something special for restaurants and bars to perk up and take notice.
Casa Dragones, a recently launched ultrapremium tequila, is just that. Made from 100 percent blue agave, it's produced in the oft-overlooked joven style; after going through a cutting-edge distillation technique, the agave receives a touch of oak-aged añejo tequila to lend it a superior smoothness.
Top bars like PDT and Employees Only--as well as restaurants like Daniel and Scarpetta--have quickly added this velvety tequila to their bar selections, where it's served as a sipping spirit (save the margaritas for something less pristine--and pricey).
The latest restaurant to fall in love with Casa Dragones is Aldea, and this Wednesday evening you can taste the tequila aboard the Freedom, a 100-foot 1920s motor yacht.
A menu of small dishes crafted by chef George Mendes includes Wellfleet oysters with ramp mignonette; bacalao croquettes; and smoked lobster with agave vinaigrette and pickled cherries--a perfect complement to the tequila's subtle smokiness.
