Ian Wogan did not expect the honey to become a business. He helps clients grow edible gardens, and inadvertently learned to raise bees as part of that venture.
At first, Wogan gave the honey by-product to friends and family, who clamored for more. Now, Wogan's vibrant honey is appearing all over town.
Chef David Thomas of The Bazaar by José Andrés lacquers empanadillas de bacalao ($12), wontons filled with salty codfish cream, with Wogan's wildflower honey. And at Tuyo, chef Norman Van Aken serves the honey, unadulterated, on a cheese plate ($5 per cheese).
For home use, Panther Coffee in Wynwood (small jar for $4) and Wolfe's Wine Shoppe in Coral Gables (half-pint for $7) both sell Wogan’s honey, and Wogan himself is launching a website soon for order and delivery.
We tossed our stash with olive oil, peach slices, thyme leaves, feta cheese and pan-charred red onion for an easy summer salad.
