Find heartland hip at the city's latest hot spots
Sea Change Chef Tim McKee (pictured), of the city's most-lauded restaurant, La Belle Vie, has recently expanded his empire to include a Caribbean barbeque joint, an upscale tequila bar and, now, this sustainable seafood spot. Located in the striking, Jean Nouvel-designed Guthrie Theater, its dishes feature fresh catch from around the globe, such as arctic char with artichoke giardiniera ($20) and linguine with sea urchin and rock shrimp ($18). 818 S. Bradstreet Crafthouse Retro cocktails make a comeback at the Graves Hotel lounge, where rare spirits are mixed by detail-obsessed drink makers: They use five types of ice, update their house-made bitters with the seasons and measure ingredients with eyedroppers. Chef Shack Overlooking the Mississippi River, the Mill City Farmers Market draws dozens of farmers who sell Minnesota's best produce, cheese, wild rice and more. For inspiration on what to do with these raw ingredients, queue up at the mobile Chef Shack, where Lisa Carlson and Carrie Summer turn their fine-dining expertise to street food: tongue tacos made with grass-fed beef ($6), bison burgers ($7), Indian-spiced mini doughnuts ($5) and torched-to-order crème brûlée ($5). 704 S.
