Caramel Corn
Yield: 8 cups
- INGREDIENTS
2 tablespoons canola oil
⅓ cup popcorn kernels
1 stick (8 tablespoons) unsalted butter
1¼ cups lightly packed dark brown sugar
½ cup light corn syrup
2 teaspoons salt
½ teaspoon baking soda
1 vanilla bean, split and seeds scraped (reserve the pod for another use)
¾ cup dry-roasted peanuts
