Classic Caesar salad may be delicious, but it can hardly be considered healthful. Instead of overwhelming romaine leaves with raw egg yolk and loads of cheese, our Test Kitchen tweaked the recipe. The Greek yogurt, Dijon mustard, lemon and fish sauce dressing is lighter and brighter than the original, but just as satisfying. Garnished with slices of lean, medium-rare flank steak and crisp shards of baked Parmesan, this salad is worth hailing.
