On Monday, November 23rd, Portland-based chef and salumist Elias Cairo, of Olympia Provisions, joined us to celebrate his brand new cookbook, Olympia Provisions: Cured Meats and Tales from an American Charcuterie with Tasting Table readers at our Test Kitchen in SoHo. This four-course dinner menu featured charcuterie from Olympia Provisions' salumeria, and the meal included dishes from the book like steamed Manila clams, braised beef short ribs and chocolate salami!
