Sharp Cheddar Sauce
Yield: 3 cups
Cook Time: 12 minutes
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2¼ cups whole milk, divided
1 cup lightly packed grated extra-sharp aged cheddar cheese
¼ cup finely grated Parmigiano-Reggiano cheese
½ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper
Pinch cayenne pepper
Pinch freshly grated nutmeg
