It's not easy being green, especially for a restaurant on wheels. But a 
handful of trucks make it look simple.

Some start small: The Sweets Truck http://www.thesweetstruck.com/ serves 
all of its baked goods--including Cookie Casa's chocolate fudge bars or 
Southern Girls Desserts' cupcake shooters--in bags made from recycled 
materials and with compostable flatware.

Others focus on an eco-conscious menu, like the new PattyWagon
 http://www.pattywagonburgers.com/ , which makes sliders with organic, 
hormone-free, grass-fed beef from Idaho.

In addition to using organic vegetables and humanely raised meats, 
Frysmith  http://www.eatfrysmith.com/ runs on a combination of diesel 
fuel and filtered vegetable oil. That means the grease those Kennebec 
potatoes were cooked in eventually powers the truck's engine.

But the gold standard for sustainability goes to Green Truck
 http://greentruckonthego.com/ (pictured), which has been rolling the 
streets since before mobile kitchens were cool.

Here you'll find compostable serving ware, but no plastic bottles or 
packaging--and the frying oil is used as biofuel. Even the commissary, 
where storage and prep take place, is solar-powered.

And to make that all-veggie Trucker Burger with homemade vegan Thousand 
Island easier to find, a Green Truck will be permanently parked on the 
Venice Boardwalk beginning later this month.
