In a separate bowl, whisk together the wet ingredients and fold in a heaping 1½ cups of grated raw sweet potato. Pour the wet ingredients into the dry and mix until just combined (don't overdo it here; you don't want to overwork the bread and make it tough). Pour the batter into a greased loaf pan.

Sprinkle the top with a hefty layer of turbinado sugar, which will give irresistible crunch to the finished product. Bake the loaf for about an hour at 350°, wait for it to cool (arguably the most difficult step) and slice into it for a breakfast that will power you through the New Year.
